Larded salami is a salami with a lean mixture, obtained by grinding high-grade lean meats and once minced they are mixed with cubes of lard. Everything is flavored with salt and whole and ground black pepper.
When cut, the slice is compact with a uniform distribution of the fat cubes and an intense and spicy smell.
As they say in our dialect… Lu salame lardellato pare grassu ma è fattu co li pezzi de carne magra. Infatti se pija le carni più bone e pregiate e se mischia cu li cubetti de lardo. Justo per daje quel sapore in più ce se mette un pò de sale, pepe e aromi. Se lascia stagiunà e lu jocu è fattu.
