The Mojà Ciauscolo PGI comes from the combination of fine pork. To enhance the quality of the meat, the mixture is seasoned with aromas and spices such as salt, ground black pepper, wine and finely pounded garlic. The whole is chopped several times until an almost soft dough is obtained.
Ciauscolo is one of the "ambassadors" of the Marches regarding cured meats not only in Italy but also abroad. A great classic that, through the evolution of processing techniques and the concept of taste, has become versatile and contemporary.
