The lonzino stagionato is a typical product of the Marche delicatessen. Tasty but with little fat, it is the leanest variant of the lonza del contadino. Available in two ways: half size and slice.
The "lonzino stagionato" is a lean cut cured meat obtained from the loin of the pig and left to mature until an exceptional final product is obtained. We at Mojà let it mature for 75 days.
The meat is pink and tasty and the scent of spices gives it a particularly inviting aroma. In fact, this salami looks like a small pork bresaola, therefore ideal for a healthy and balanced diet.
As they say in our dialect... Lu lonzino stajunato è un salame magru fattu co la carne de lu maiale. Infatti se lu vedi la carne c’ha lu colore rosa e senza un filo de grassu. Lu profumo è delicato e na fetta tira l’altra.

The "lonzino stagionato" thanks to its pink and fat-free slices is aesthetically very good. In fact it is the protagonist of every dish.
We recommend that you eat the loin in slices individually, perhaps having fun rolling it up and creating all different shapes, or as a snack or aperitif accompanied by cherry tomatoes, onions, salad and wood-fired bread. Free your creativity!
