The "lonza stagionata" is a sausage obtained from the processing of pork that is boned, salted, massaged with care and left to mature for a period of at least 90 days with the addition of spices and aromatic herbs. It has a pleasant and delicate flavor. In fact, the aging takes place according to times and methods that guarantee the acquisition of typical flavor and consistency. It is also a dish that meets the most modern culinary needs since it is low in fat and is very versatile in the kitchen.
"Lonze", "lonzini", "filettino" ... are they all the same? Absolutely not! The differences are there and above all they can be felt.
As they say in our dialect.... La lonza stagionata ha un sapore delicato e ma gustoso. Piace a tutti quanti, anche perchè c’ha poco grasso e se ne pole magnà tranquillamente tutte le fette che ve pare.
