Unique, already triangular in shape. The pepper barbaja is obtained from the pig’s cheek. Available in two sizes: whole and slice.
Pork cheek trimmed, salted, peppered on the surface and left to age.
The barbaja ("guanciale") with pepper is seasoned after flavoring with salt, pepper and a particular mixture of aromatic plants. It has a very intense and spicy flavor and has a harder consistency than bacon which is instead obtained from the belly of the pig.
As they say in our dialect.…La barbaja al pepe altro non è che la guancia de lu maiale. Da non confonne co la pancetta, lu guanciale c’ha lo sapore più forte e la consistenza più dura.
