The crispy cotica is the pork rind and is a very inviting and delicious dish because it is made with the skin of the pig, defatted, salted and finally baked in the oven, to make everything golden and above all crunchy. For us at Mojà they are like french fries and one leads to another! Available in an modified atmosphere bag that preserves all the fragrance and goodness of the crispy cotica up to 60 days.
We at Mojà use to say that "When pigs are butchered, nothing is wasted!" The crispy pork rinds are the best example. In fact, we carry on the thought that nothing should be thrown away, always finding new ways to reinvent and give the right value to each dish.
As they say in our dialect.…Le cotiche so la pelle de lu maiale. Noi de Moja però le famo belle scrocchiarella. Infatti pijamo la cotenna di schiena de lu maiale, la sgrassimo, la salimo e la facemo coce su lu fornu cosci diventa scroccarella!

To taste the product it is recommended to heat them: in the oven at 200°C for 2 minutes, or in a non-stick pan over moderate heat for 7 minutes.
The crispy pork rinds are perfect to prepare appetizers or aperitifs to enjoy with friends. We suggest you break them up and accompany them with salad, mozzarella and cherry tomatoes.
Thanks to their unique appearance that characterizes them, with all golden bubbles and different and particular shapes, they are very beautiful to look at and it takes very little to create easy but amazing recipes. Impossible to resist!
