The "Coppa of Mojà" is made also with pig's ear, oranges, olives and almonds. It is an artisanal product, the preparation of which requires competence and experience. In addition, the coppa is very nutritious and with a balanced but full-bodied flavor.
As they say in our dialect.… La coppa de testa è un insaccato tipico marchigià. Noi de Mojà la facimo in una versione tutta nova dove ce mettimo la parte dell’orecchio de lu maiale e un pò de arancia, olie e mandorle. Lu gustu è quello vero, semplice de una orta, che solo a guardalla te vie voja de magnalla.

Ideal not only as an appetizer or sandwich filling, but also as a main dish. It can be eaten thinly sliced and enriched with rocket, or to prepare delicious snacks. We recommend cutting the coppa into many small pieces, adding half a slice of orange, the olives and keeping everything together with the help of a toothpick. A sort of mini skewer which will then be placed in a plate with rocket.
